We now have three children, 11th, 9th, and 5th grade, who I have been able to homeschool for several years. Not many people can say they take field trips to their local lighthouse! We are blessed to raise our family in such a beautiful and inviting place. So now that we have the location covered, it’s time to take care of the second half and our favorite part of the Crystal Coast picnic experience, the refreshments! We like to keep it simple and fun! Finger foods make a great poolside and on-the-beach picnic staple. They are also the easiest to prepare and make for an excellent presentation! Here are a few ideas to help you plan the perfect picnic menu!

Crystal Coast Picnic Food and Drinks

Regarding the liquid refreshments, we want to keep them versatile and straightforward! Start with picking up your favorite brand of seltzer water. That will be the base of your drink, and some may prefer to drink just that. Add a fruit juice of your choice, and you have a fancy mocktail, just garnish with fruit! If you want to make this a cocktail, add some flavored rum or liqueurs to this mix, and that’s all there is to it!

Strawberry Lemonade Mocktail

Ingredients:

  • 1 cup of fresh strawberries
  • 1/2 cup of freshly squeezed lemon juice
  • 1/2 cup of honey
  • 1/2 cup of sparkling water
  • Ice cubes

Directions:

  1. In a blender, puree the fresh strawberries until smooth.
  2. In a pitcher, mix the strawberry puree, lemon juice, and honey until well combined.
  3. Add sparkling water and stir gently.
  4. Pour into glasses filled with ice cubes and garnish with fresh strawberries and lemon slices.

Pineapple Ginger Mocktail

Ingredients:

  • 1 cup of fresh pineapple chunks
  • 1/4 cup of freshly squeezed lime juice
  • 1/4 cup of honey
  • 1-inch piece of fresh ginger, peeled and grated
  • 1/2 cup of sparkling water
  • Ice cubes

Directions:

  1. In a blender, puree the fresh pineapple chunks until smooth.
  2. In a pitcher, mix the pineapple puree, lime juice, honey, and grated ginger until well combined.
  3. Add sparkling water and stir gently.
  4. Pour into glasses filled with ice cubes and garnish with fresh pineapple chunks and ginger slices.

Cucumber Mint Mocktail

Ingredients:

  • 1 large cucumber, peeled and chopped
  • 1/4 cup of freshly squeezed lemon juice
  • 1/4 cup of honey
  • 1/4 cup of fresh mint leaves
  • 1/2 cup of sparkling water
  • Ice cubes

Directions:

  1. In a blender, puree the chopped cucumber until smooth.
  2. In a pitcher, mix the cucumber puree, lemon juice, honey, and fresh mint leaves until well combined.
  3. Add sparkling water and stir gently.
  4. Pour into glasses filled with ice cubes and garnish with fresh cucumber slices and mint leaves.

In 2017, our daughter, Kalen, graduated from NC State, and in 2019, our son, Ryan, graduated from Croatan High School and headed to NC State. We reflected that much of our lives had centered around our kids’ extracurricular activities. Therefore, we needed to find something to do with our free time. We enrolled in real estate classes with plans to sell real estate in retirement. Joe and Rachel Shenk are first-generation farmers in Newport, NC. Their farms offer farm-to-table, fresh chicken, pork, grass-fed beef from Piney Woods Farm, eggs, bone broth, and more. Their passion is to manage their farm in a way that promotes happy and healthy animals, land, community, and farmers. They want to know their customers and for their customers to know them. They also value equipping people to prepare their products in a way that brings them joy and create delicious meals to share with the people they love. Your meat will come vacuum sealed and frozen.

The farm-to-table fresh produce bundles from the Carteret Local Food Network typically consist of various fresh, seasonal fruits and vegetables grown and harvested by local small-scale farmers. Each bundle will contain approximately 12-16 servings of local, seasonal veggies, so be sure to snag as many as you need depending on how many people you’re feeding. Tanya and Travis Watson take pride in growing heirloom, cottage-style blooms unlike anything you’d find in a box store or traditional florist shop. Your seasonal bouquet will be filled with a variety of colorful blooms and greenery hand-picked from our fields to your vase. Each bouquet will be cut and prepared by hand, assembled in a jar, and hand-delivered to your doorstep.
